Head Pastry Chef
Location: Fonvieille, Monaco
As a Head Pastry Chef, you will be responsible for managing and overseeing all aspects of the pastry department at our upscale restaurant in Fonvieille. Your role will involve creating and implementing new dessert menus, training and supervising pastry staff, ordering and managing inventory, and ensuring high-quality standards are consistently met. You must have strong leadership skills, excellent time management abilities, and a passion for creating delicious and visually appealing desserts. This is an exciting opportunity for an experienced Pastry Chef to take on a leadership role in a prestigious establishment.
Responsibilities:
- Develop and introduce new dessert menus in collaboration with the executive chef
- Oversee daily operations of the pastry department including production, plating, and presentation
- Train and supervise pastry staff on techniques, hygiene standards, safety procedures, and menu items
- Order supplies and maintain inventory levels to ensure smooth operations
- Maintain high levels of cleanliness and organization in the pastry kitchen
- Ensure all desserts are prepared to the highest quality standards
- Monitor food costs and work within budget constraints
- Create schedules for pastry staff to ensure proper coverage during peak business hours
- Collaborate with other departments to coordinate dessert offerings for special events or promotions
Requirements:
- Proven experience as a Pastry Chef or similar role in a fine dining establishment
- Culinary degree or equivalent certification preferred
- Extensive knowledge of various cooking methods, ingredients, equipment, safety procedures, sanitation codes
- Strong leadership skills with the ability to motivate and train staff effectively
- Creative mindset with an eye for detail to create visually appealing desserts
- Excellent time management skills with the ability to handle multiple tasks simultaneously
- Ability to work in a fast-paced environment while maintaining high-quality standards
- Basic math skills for food cost calculations
- Proficient in English (French language skills are a plus)
Salary:
Starting salary of $1200 per month, with potential for growth based on performance. Additional benefits include health insurance, vacation time, and meal discounts.
